Bones are the main reservoir for calcium. If there is insufficient calcium from the diet, the PTH gland will draw calcium from the bones as well as increase intestinal absorption of available calcium. So even though most of our calcium is in the bones, the blood and cellular concentrations of calcium are maintained first. Foods high in oxalic acid such as spinach, rhubarb, chard, and chocolate can interfere with calcium. Phytic acid or phytates found in whole grains or foods rich in fiber, may reduce the absorption of calcium and other minerals. The bones will provide calcium to the blood and other tissues for the difference. Calcium stimulates heart and muscle contraction and is important in nerve transmission and in cell division.
